Stir Fry Recipe
Stir Fry is a simple recipe that allows adding a variety of vegetables as desired. A great concept is using vegetables that are able to be cooked together on the stove. This allows for an even simpler recipe when it comes to making stir fry and it tastes just as delicious. We always try and avoid soy options and were able to find ingredients that are soy free, but all together tastes extremely similar to the soy option but has significantly less sodium (which is always a plus!).
What you’ll need: (roughly 2-4 servings)
Chicken (four breasts)
Broccoli (1 cup)
Cauliflower (1 cup)
Carrots (1/2 cup, sliced)
Mushrooms (1/2 cup, sliced)
Jasmine rice (2 cups)
Teriyaki sauce (as desired)
Olive oil
Salt & Pepper
Cooking Instructions:
Put two cups of rice into the instant pot (or can cook minute rice on the stove instead of using an instant pot).
Rinse the Jasmine rice in water before cooking to remove excess starch.
Add two cups on water & rice to the instant pot and select ‘rice’ on the outside of the pot (the rice option will cook for roughly 30 minutes).
Wash the broccoli, cauliflower and slice it in half.
Wash the carrots & peel them along with washing the mushrooms and removing any dirt.
Slice the carrots and mushroom into small pieces.
Heat up a pan on the stove at medium heat and once warm, add olive oil and all of the vegetables along with salt & pepper and mix altogether (continue to stir every few minutes.
While the veggies cook on the stove, start the chicken by removing any fat and add salt and pepper to both sides. Ideally would recommend pounding the chicken before placing on the stove.
Heat up a pan on medium heat, once warm add olive oil and place the chicken on the pan (flip in seven minutes twice and cook for three in addition before consuming).
Once cooked, let the chicken cool down for a few minutes and then slice into small pieces.
Add the slices of chicken to the veggie pot along with the teriyaki sauce of choice and mix together.
If the rice if finishes cooking, stir it around and let it cool down. Select the amount desired to eat with stir fry.
Place the vegetables and chicken on the rice and add any additional sauce if needed.
