Chicken Soup Recipe
Soup can be eaten any time of the year but fall is our favorite time of year to make delicious & traditional chicken soup! It uses minimal ingredients, but definitely hits all the right spots & is often scarfed down to the very last drop. This can be eaten with noodles or rice (or both)! Either way, it is the perfect dinner option this time of year!
What you’ll need: (roughly 6-8 servings)
Whole chicken (organic)
Celery (4 - 5 sticks)
Onion (1 yellow onion)
Carrots (4 sticks)
Chicken Broth (3 - 32oz containers)
Salt & pepper
Bay leaves (2)
Egg Noodles (as desired)
Cooking Instructions:
Season the whole chicken with salt & pepper, place into a large pot.
Peel and slice the carrots, celery & onions and throw them in the same pot.
Add enough broth so that the chicken is fully submerged (this tends to require about 3 containers of broth).
Add the two bay leaves as well
Once everything is in the pot, put it on the stove top, bring to a boil & then let it simmer for slightly an hour and a half.
Check to ensure the chicken is fully cooked (can use a thermometer to ensure it is at least 165 degrees F), then remove chicken from the bones & shred it to a desired size.
Get rid of the bones and put the chicken back in the pot.
Let it cool before placing in the fridge over-night (not necessary if you plan to eat it shortly after the chicken is cooked, would just let it cool down a bit before consuming, roughly 10 mins or so).
Ideally skim off any fat that has risen to the the top before consuming. (this will likely be visible once the soup is in the fridge overnight) so try & skim a layer of fat off the top before reheating.
As the soup cools down, fill a bowl with water and place on the stove at medium heat until it boils.
Add the egg noodles of your choice (can also add rice instead if preferred) & let them cook for 5-8 mins & test them before removing from the stove.
Once the noodles are done they can be added to the soup pot & it is time to enjoy!
*Once the soup is left overnight in the fridge, we recommend scooping out what you plan to eat and heating it up in a small pot on the stove (place the pot on medium to allow the ingredients to fully heat back up).
