Spicy Chicken Recipe

Spicy chicken is extremely easy to make and just needs some TLC by being placed in an insta pot and letting it slow cook for a few hours. It is perfect because it is always ready just in time for dinner and can be added to any dinner ideas you have in mind. Ours in particular is put on a delicious cheese tortilla and pairs with delicious salsa that adds a nice kick to it. Spicy food is definitely not our go to, but it sure checks all the boxes when combining your favorite things all in one.

What you’ll need: (roughly 2-4 servings)

  • Chicken (3 breasts)

  • San Marzano Tomato (28 oz)

  • Garlic (1 tbsp)

  • Chili powder (2 tbsp)

  • Crushed red pepper (1 tbsp)

  • Ground cumin (2 tbsp)

  • Cayenne pepper (2 tbsp)

  • Paprika (1 tbsp)

  • Salt & Pepper

  • Cheese (as desired)

  • Sour Cream (as desired)

  • Salsa (as desired)

  • Avocado (as desired)

Cooking Instructions:

  • As they remain whole, place each chicken breast into the insta pot.

  • Add the tomato sauce followed by all of the seasoning included above.

  • Slow cook the insta pot on low for six hours (can be cooked on high for four hours if preferred).

  • Once six hours has passed, remove each piece of chicken onto a cutting board and shred with two forks.

  • Once shredded, put back into the insta pot and stir back into the remaining sauce.

  • The insta pot should remain hot, so let the chicken sit for a few minutes so it can soak up the flavorers once more.

  • Grab a tortilla and place it on a pan to cook on medium/low heat

  • Add a layer of cheese to the entire tortilla and cover half with the spicy chicken

  • Close and flip a few times until desired crispness

  • Once crisp, remove from the stove & once on your place, group your taco with any desired toppings (recommend medium salsa since the chicken is spicy).
