Chili Pepper Chicken Recipe

Chili pepper chicken is extremely easy to make and just needs some delicious flavor added & letting it cook in the oven for a bit to get nice and crispy. It is perfect because it is always ready just in time for dinner and can be added to any dinner ideas you have in mind. Ours in particular is to pair it with rice & a delicious vegetable such as broccoli. This has become one of our go-tos since it sure checks all the boxes when combining your favorite things all in one.

What you’ll need: (roughly 2-4 servings)

  • Whole Chicken

  • Chicken broth (1/2 cup)

  • Chilli pepper (1)

  • Honey (1 tbsp)

  • Cumin (as desired)

  • Chili Powder (as desired)

  • Salt & Pepper

  • Limes (2)

  • Chili flakes (as desired)

  • Cinnamon (as desired)

  • Jasmine Rice (2 cups)

  • Broccoli (whole)

Cooking Instructions:

  • Preheat the oven to 425 degrees.

  • Heat up a pot on medium heat and as that warms up, juice the lime so it can be used & slice the chili pepper into small pieces.

  • Once the pot is ready, add chicken broth, honey, chili pepper, and the lime juice. Bring to a boil and then let sit simmer (can add a desired amount of chili flakes as well if more spice is needed).

  • Next start slicing the chicken into quarters.

  • Layer both sides of the chicken with salt & pepper, then follow up with the desired amount of cumin & chili powder.

  • The cinnamon powder can be added last for the chicken seasoning.

  • One the oven is heated up, add the chicken and let cook for 20 minutes.

  • Rinse the Jasmine rice in water before cooking to remove excess starch.

  • Add two cups on water & rice to the instant pot and select ‘rice’ on the outside of the pot (the rice option will cook for roughly 30 minutes).

  • When the 20 minutes is up for the chicken, take it out and layer it with the chicken broth flavor that is simmering on the stove (ensure some of the chili pepper slices are on the chicken vs just floating around).

  • Let cook for an additional 25 minutes (ensure the internal temp is at least 165 degrees before removing).

  • Slice up the broccoli and layer it with olive oil and salt & pepper. Cover it with tin foil and place in the oven to cook alongside the chicken for 25 minutes.
